Sterilization of a product means killing all heat-resistant microorganisms and enzymes through an intense heat treatment. The possibility of long-term storage of products at room temperature is one of the main advantages of this thermal process; There are two types of sterilization, direct and indirect.
In the direct type, steam is injected into the product, while in the indirect type, heat is transferred to the product through the pipe wall and there is no mixing between the product and the steam.
In direct sterilizers, food grade steam is injected directly into the product and the temperature of the product is raised to 135-140 degrees Celsius and the product is held at this temperature for 4-8 seconds before cooling. In case of the slightest drop in temperature, the sterilizer will come out of sterilization and ready for CIP and sterilization. After the Holder, the product enters a tank under vacuum, where, while removing all injected steam, it cools to 80 degrees Celsius and then enters the aseptic homogenizer.
In the indirect sterilizer, the product enters the balance tank at a temperature of 4°C and after recovering the heat from the output hot product at a temperature of 75°C, it enters the homogenizer to be homogenized at a pressure of 180-250 bar. The homogenized product is directed to the heating sections and is heated stepwise first to 90°C and then to 140°C. Normally, we have two retention times in indirect sterilizers. The initial retention will be for 90 seconds at a temperature of 90°C to allow the stabilization of proteins, and the second retention will be for 4 seconds at a temperature of 140°C to meet the sterile process time conditions. Finally, the product cools down to about 20 degrees Celsius and leaves the sterilizer while recovering heat by preheating the incoming cold stream.
