Sterile Dairy Production Line
In the sterilization process, all heat-resistant microorganisms and enzymes are deactivated by using heat treatment, which is used to produce liquid food products with a long shelf life. In this way, the possibility of any chemical and enzymatic activity is removed from the dairy product, and without preservatives, the shelf life of dairy products increases under proper packaging and storage conditions.
The main components of a sterile line are sterilizer, aseptic homogenizer, aseptic tank and aseptic filler.
Sterilizers are designed and produced in two direct and indirect models.
In the direct system, the homogenizer is located downstream and after the UHT process because the increase in temperature may cause the milk fat to clump and the protein to form a clot, which breaks the clump and clots with the homogenization operation. Next, the milk is cooled down to 10 degrees Celsius through regeneration of the inlet milk in the heat exchanger and exits the sterilizer. Due to the additional plate heat exchanger installed in the way of the outlet valve, the valve can be brought to the desired temperature.
In the indirect sterilizer, the milk is heated to 75 degrees after the first converter and enters the homogenizer. In the indirect system, the homogenizer is usually placed upstream. If the percentage of production and milk is high, then the system is directly downstream.
The milk is heated up to 110 degrees Celsius by recovering the heat from the outlet milk , and then in the heater section, it is brought to a temperature of 135 degrees with the help of hot pressured water, and finally, after heat exchange with the inlet milk , It leaves the sterilizer at a temperature of about 20 degrees Celsius.
There are two holding times in this process; One for 90 seconds at 90 degrees (before the main heater) to fix the proteins, and the other for 4 seconds at 135 degrees to complete the sterilization process.

Sterilization
The sterilizer is sterilized by circulating hot water at 140 degrees under pressure for 30 minutes, then it is cooled step by step until it reaches the appropriate production temperature.

If the aseptic tank or filler is ready, milk can be received with a sterilizer. During receiving, if there is a problem for any reason, sterile water is replaced with milk and the milk is completely emptied from the sterilizer and sterile water is circulated.
